NUR241 - Nutrition

Credit Hours: 2

Course Description

This course is designed to introduce basic principles of scientific nutrition and present the applications in client-centered care. Nursing process, life span development, and cultural aspect of nutrition will be integrated. Community nutrition is coordinated with an emphasis on weight management and physical fitness. Current medical treatment and approaches to nutrition management will be discussed. Special areas include developments in gastrointestinal disease, heart disease, diabetes mellitus, renal disease, surgery, cancer, and AIDS.

NUR220, NUR230, & NUR231 Course Co-Requisites: NUR240

Student Learning Outcomes

Upon completion of this course, students will be able to:

Utilize the nursing process in the delivery of nutritional care for the client and family
Practice professional nursing behaviors within legal, ethical, and regulatory guidelines in providing nutritional care
Apply therapeutic communication skills verbally and non-verbally in providing and maintaining special diets based on the client’s diagnosis, nutritional needs and cultural consideration
Demonstrate evidence-based practice while providing nutritional care appropriate to the growth and development needs across the life span
Employ caring and holistic intervention in evaluating and monitoring side effects of enteral and parenteral nutrition
Demonstrate teaching and learning principles in nutrition education
Describe the role nurses play in providing client-centered care to meet client’s nutritional needs
Utilize nutritional knowledge and skills to advocate clients and families toward growth of human being
Examine the evidence to challenge traditional and existing nutritional practice to improve the quality of care for clients, family, and community
